Good morning! I hope everyone’s managing to stay warm. It definitely feels like fall around here, and this week I’m sharing a bunch of my favorite fall meals. Here’s what we’re planning to eat this week.
MONDAY: Tilapia Parmesan with Roasted Broccoli & Cauliflower and a salad
TUESDAY: Chicken Chili with Heather’s Gluten-Free Sweet Cornbread
WEDNESDAY: Korean Beef (hat tip to Practical Paleo) with Bok Choy with Bacon & Onions
THURSDAY: Pizza Takeout for Halloween!
FRIDAY: We will be at the hospital with my son, who is finally having surgery, but my mom will be here with the girls and I’m going to leave her the ingredients for Chicken In A Pot.
SATURDAY: Company Pot Roast (I’m going to leave a pot roast for my mom to cook. Hopefully we will all be home for dinner that night. I grew up on this recipe. Simple and easy and SO YUM.

The Tilapia Parmesan looks like a keeper. Nothing beats easy, no fuss recipe for weeknight dinners.
