Watermelon Mojito Recipe

Everyone loves a mojito. A classic mint mojito is still my favorite summertime drink, but sometimes it’s fun to change it up.

Colleen came up with this Watermelon Mojito Recipe, and you guys, I cannot WAIT ’til the weekend to give this a try. Doesn’t it just scream SUMMER!??

To make this watermelon mojito, you want to start with a fresh watermelon. Cut it in half, scoop out two heaping cups of watermelon, and add it to your blender. Then measure 1/2 cup of watermelon juice from the remaining watermelon into the blender. Puree until smooth.

At this point, you can add 2-3 tablespoons of freshly squeezed lime juice to the blender and give it a quick pulse. Every watermelon is different, so you’ll want to give it a taste. If it’s not sweet enough, add some simple syrup.

Simple syrup is easy to make. Just heat 1/4 cup water and 1/4 cup sugar in a saucepan on the stove over medium heat. Stir until the sugar dissolves, about 3 minutes. Take it off the heat and let it cool ’til you’re ready to assemble your mojitos.

When you’re ready to assemble your mojitos, fill a long drink glass half-full with the watermelon/lime puree, add a handful of mint leaves, and muddle with a cocktail muddler or a wooden spoon.

Then add rum to your liking. You can also add more simple syrup if desired. Fill the rest of the glass with ice, and add a little splash of club soda. Give it a stir, and garnish with a slice of watermelon.

Ingredients
  • 2 heaping cups watermelon
  • 1/2 cup watermelon juice
  • White rum
  • Mint leaves
  • 3 TBS fresh lime juice
  • Optional: Simple Syrup (1/4 cup white sugar dissolved in 1/4 cup water)
  • Optional: Club soda or Sprite
Instructions
  1. Scoop out 2 cups of fresh watermelon and add to your blender.
  2. Measure 1/2 cup of the watermelon juice that was created when you scooped out the watermelon, and add that to the blender as well. Blend on high until it liquefies.
  3. Add 3 TBS fresh-squeezed lime juice, and give it a quick pulse.
  4. Taste. If the puree is not sweet enough, you can add some simple syrup. To make the simple syrup, combine 1/4 cup sugar and a 1/4 cup of water and heat in a small pot on the stove, stirring constantly, until the sugar is dissolved (2-3 minutes). Add some or all of the simple syrup to your puree, or reserve it until you make it by the glass and customize each mojito.
  5. Fill a glass half-way with the puree, add a handful of mint leaves, and muddle with a cocktail muddler or a wooden spoon.
  6. Add the rum (to your liking) and some simple syrup, if desired.
  7. Fill the rest of the glass with ice, top it off if necessary with some more puree, or if you like a little fizz, add a splash of club soda or sprite. Give it a stir and enjoy!
  8. Garnish with a small watermelon slice.
