Spinach, Bacon, Egg & Cheese Omelette

This is a great nourishing breakfast to start your day off right. I’m trying to incorporate vegetables into my daily breakfasts, but it’s not always easy. This is the easiest and tastiest way I know how, and it has become a staple in my diet.

Basically, you need good quality pastured eggs and whatever cheese you like. If you have leftover breakfast meat in the fridge, that adds a nice dimension to it but you don’t really need it. Then whatever veggie you like. (I try to save leftover spinach or broccoli or asparagus from dinnertime to use in my breakfast.) In this instance, I had leftover bacon and spinach in the fridge so that’s what I used.

Crack the eggs into a bowl, add some heavy cream or milk and whisk. Then melt a couple pats of butter in a small iron pan over low heat. Low heat, I’ve learned, is key, as you don’t want the butter to brown. And don’t be afraid of using a couple tablespoons of butter. See my post on Embrace the Fats.

When the pan is hot and the butter is melted, pour in the eggs and allow them to cover the bottom of the pan. Sprinkle on top your cooked and crumbled bacon and whatever veggie you are using. (Remember, I’m using leftover veggies that are already cooked, so they just need to be warmed up.) While that cooks, grate some cheese. I used Parmesan. Cheddar works well too. If you have Swiss or Gruyere, even better!

When it starts to look like the bottom is getting set, carefully flip it over to cook the other side. (I hate runny eggs so I like to make sure both sides are done.) Then sprinkle the cheese on the done side and turn off the heat and let it sit while it cooks through and the cheese begins to melt.

It was too big for my plate so I folded it in half like an omelet and voila! DELISH.

And the best part?  My kids love it too.

The variations are limitless.  Try ham or sausage instead of bacon.  Try different kinds of cheese.  Try broccoli or asparagus instead of spinach.  What else do you add to your eggs?

  1. I put whatever veggies I have with my eggs-red pepper,broccoli,cauliflower, or spinach are common ones.

  2. Spinach (or any other green) and goat cheese are delicious. I like them with just cheddar cheese. If you really want to go all out, try leftover turkey, spinach, a little dried dill, cheese and any other veggies you’d like (mushrooms, onions, red pepper, etc). Then top with hollandaise sauce. This is my husband’s favorite breakfast!

  3. My hubby loves to mix some salsa in when he whisks the eggs and then pour it all in the omelette pan and top with cheese and ham and mushrooms and leftover brown rice Yum!! Sometimes he’ll throw in some almond butter and curry with the eggs too, and it’s surpringly super tasty!! Our ‘egg guy’ is not getting as many eggs from his chickens in our frigid cold weather and I am missing eggs sorely now!

  4. I’m kindred spirit to those who are willing to view recipes as merely suggestions! My fave take on this is to saute garlic and chopped onion till brown, then toss in spinach and slightly beaten egg. It is my high protein go to breakfast when I’m in a pinch to eat well and fast.

  5. Oooo – my favorite breakfast! I love to saute sliced mushrooms and halved grape tomatoes with a pat of butter, then add a little worchestershire, pepper and salt. Next add a few egg whites and 1 whole egg. You can scramble or continue to saute like an omelette! Yumm-o!!

  6. I wonder if my kids would eat this. Probably not. I am happy though that they, correction, my 4 year old has been back in the mood to eat eggs. I’ve never been much of an omelete girl but this does look yummy!

  9. You mention bacon in the ingredients, but it doesn’t come up in your instructions. I assume you sprinkle cooked bacon in when you put the spinach in.

    1. You are right, those instructions were horrible. LOL. I also didn’t mention putting the eggs in the pan. I have adjusted them, but yes, you are correct. I added the bacon with the spinach.
