TUESDAY: Salmon Cakes with a side of sautéed zucchini and summer squash
WEDNESDAY: Mexican Lettuce Wraps
THURSDAY: Grilled Pork Chops with Aunt C’s BBQ Sauce and fresh veggies from the CSA (waiting to see what we get tomorrow!)
FRIDAY: Pizza made with Rose Romano’s Peppers, 2 cheeses and pepperoni (recipe to come!)
SATURDAY: Leek and Asparagus Frittata via epicurious.com with side salad

I spent a good bit of time chatting with my roommate at the conference who just became a nutrition and wellness coach (cristie ritz-king). After a lengthy discussion she has convinced me to try my 8 year old on a gluten free diet for a couple weeks to see if that helps with some of her issues (especially since the pediatrician thinks I’m crazy). So I’ll totally be stealing your menus for a few weeks as I figure this out!
