Weekly Menu Plan 07.07.13

The dog days of summer are in full swing. I’m still working off my master summer meal plan, although I find myself deviating from time to time. It sure is nice to have the skeleton already created though! This week I’m planning the following.

MONDAY: Beef Brisket a la Pioneer Woman, steamed green beans and “mock” garlic mashed potatoes (cauliflower)

TUESDAY: Tequila Lime Chicken with Dill Fingerling Potatoes and Roasted Brussels Sprouts (we actually ate this on Saturday night but it was on the agenda for this week so I’m including it here. These recipes are all fantastic.)

WEDNESDAY: Italian Style Stuffed Peppers with a side salad

THURSDAY: Tilapia Parmesan with Zucchini Pasta

FRIDAY: Ribs (recipe to come) with corn on the cob and sautéed Swiss Chard

SATURDAY: dinner out

  1. I use a master plan during the holidays and usually during the summer, and it’s so helpful! We’re not home enough this summer to make it worth it. Kind of bummed and kind of excited about that =]

  2. Hi Jo-Lynne! Hmm what am I eating? Well tonight we are having bbq ginger chicken, grilled veggies and probably salad. That’s all I have so far! 🙂
