Weekly Menu Plan 01.19.13

Happy Sunday! This week I have been consumed with all things cookbook, and I am so excited about some of the recipes I’ve come up with!!! Did you see my Gluten-Free Banana Cinnamon Pancakes? OH, YES  DID!!!! I also made some sweet Nutella Pancakes and a Blueberry Breakfast Cake that was divine . . . I cannot WAIT to see them in print in my very own cookbook!!!

Meanwhile, we gotta eat! So here’s what’s on the menu this week.

MONDAY: Sweet Potato Hash a la Wholesome Dinner Tonight (we will probably throw a fried egg on top and serve it with a side salad)

TUESDAY: Pork Chops with Gravy (recipe to come), gluten-free mac & cheese, and steamed green beans

WEDNESDAY: Red Wine Marinated Flank Steak (I’m going to try the broiler since 8 degrees is a BIT too cold to grill), Dill Fingerling Potatoes (except with thyme) and roasted asparagus

THURSDAY: Slowcooker Cheesy Hashbrown Casserole (recipe to come)

FRIDAY: Shaved Parmesan Chicken with Lemon Creme, rice and roasted broccoli

SATURDAY: Philly Cheesesteaks

  1. Sweet potato hash sounds insanely good! I have to confess, I’m terrible at menu planning. ugh, I really just wish I could afford a chef.

  2. Made the dill fingerling potatoes … except I subbed the fingerlings for baby yukon golds, as the former are hard to find in my area. Still delicious! Want to try those cinnamon banana cakes though =)

  3. The funny thing about the sweet potato hash is that I know when I make it my kids will say “No thanks!” but then after I make them eat it, they will ask for seconds.
    Can’t wait to try that recipe–the bacon will help win them over!
