This week has been kinda nuts, as all weeks in May are for us, with baseball games and all the end of school year activities. I actually created a round up of 26 easy weeknight dinner recipes as a resource to help me get dinner on the table fast on those busy school nights. I’ll be pulling from that list for this week’s meal plan. Also, we are cleaning out our freezer in anticipation of ordering another cow share soon so I’m going to have to finally use all those cuts of meat I’ve been avoiding.

Weekly Meal Plan
MONDAY: Ham & Egg Hashbrown Casserole
TUESDAY: Braised Short Rib (we have short rib in the freezer from our last cow share) with steamed green beans
WEDNESDAY: Loaded Baked Potato Salad
THURSDAY: Salsa Chicken with side salad
FRIDAY: Slowcooker Mexican Lettuce Wraps
We usually do take out or eat out on Saturday, and Sunday is often a free-for-all — either leftovers or sandwiches or, if we’re lucky, dining out!
