How to make oven roasted tomatoes - a delicious topping for pasta or pizza!

I’ve had a lot of questions about how I prepared my oven roasted tomatoes. Roasting tomatoes quite simple, really! Just slice raw tomatoes and lay them out on a baking sheet (you can line it with parchment paper if you’d like) and drizzle them with olive oil — enough to coat but not so much that they’re drowning in it.

Then season with sea salt, pepper, and any herbs you like. I used Italian seasoning. Then all you do is pop them in the oven at 300 degrees for 30-40 minutes or until they’re starting to brown. Watch them, and do not let them burn. You can cook them at an even lower temperature if your oven allows it.

My daughter loves eating roasted tomatoes right out of the pan. You can also use them as a pizza topping like I did here.

Or serve them over pasta or zucchini noodles or spaghetti squash.

Thankfully my food photography has improved over the years!!!

So that’s how to roast tomatoes! Easy peasy!

If you have extras, they freeze beautifully. I store mine in quart-sized zipper freezer bags.

  1. This looks tasty! Do you cut the little “seed pods” out first? I can’t quite tell, some look like they have them & some don’t.
