Ingredients
  • 1 pound of slab bacon, whole (Just ask your butcher or farmers market to cut you off a hunk. THIS is good for SO many things!!)
Instructions
  1. Cut the bacon into 1/8-inch slices and dice.
  2. Cook in a skillet over medium heat until bacon is crisp. (If your slab bacon is lean, you can add a little grapeseed or olive oil to your pan to help it along.)
  3. Scoop bacon bits out of the pan, drain on paper towels and store in a sealed container in the fridge until ready to use.
Notes
Wrap leftover slab bacon tightly until you are ready to use it again. It will keep several weeks in the refrigerator, as long as it was fresh when you purchased it. [br]The ends may begin to darken and dry out. If so, just slice them off and discarded before using the rest. [br]Freezing of slab bacon is not recommended.
