Hamburger Soup

hamburger soup

I have no idea where I found this hamburger soup recipe. I’ve googled and googled to no avail. So if it is yours, please speak up and I’ll link back to you!!

This hamburger soup is a family favorite. It’s a bit like chili, but without the beans, and not as spicy. It’s nutritious, easy to prepare, and the kids love it.

You start by sautéing chopped onions and ground beef in a couple tablespoons of beef tallow (or lard or olive oil or whatever oil you have on hand).

ground beef

While that’s getting all happy, you dice carrots, turnip and celeriac. The first few times I made this, I used carrots and celery, but this fall I’m getting tons of turnips and celeriac from my CSA so I’m able to make the recipe as it is written.

carrots, celeriac, and turnips

Just slice, dice or chop… whatever you prefer.

Add that to the ground beef and saute for a few minutes.

Then add beef broth and tomato paste and bring to a boil. I like this organic beef broth by Pacific Natural Foods, and I always buy my tomatoes in a glass jar to avoid BPA.

The broth adds a nice base for the soup, and the tomato paste adds a richness that enhances the beef and veggies. Add to that some seasonings — salt and pepper, oregano, thyme, parsley and some garlic if you have it. Garlic powder works fine too.

Bring it to a boil, then cover it and simmer on low for about 30 minutes until it’s nice and thick and all the flavors are combined nicely. Garnish with chopped fresh parsley.

It’s also nice with shaved parmesan if you do dairy.

  1. My grandmother introduced me to a similar recipe years and years ago. …I mean a *long* time ago! I think she found it either in the newspaper or in a Sunset magazine. 🙂 Anyway, it always tastes great, feels like a wholesome meal and has the added reminder of spending time with Grandma. I notice that we have the same brand of spices and I have the same green placemats, too. (I feel so connected, lol). Thank you for sharing this recipe.

  2. May I pin this recipe on Pinterest? I was saving all of my recipes to ZipList and then they closed up shop. Now trying to save everything on Pinterest so I can find it again. This sounds so delish. Thank you for suggesting grass-fed beef. I need to start the switch to cage-free chicken and grass-fed beef. Or maybe just go vegetarian? Merry Christmas!

    1. Yes, pin away! It helps get my hard work in front of more people. 🙂 And that’s a bummer about Ziplist. I used to use them too.

I don’t think it is healthier to be vegetarian, actually. But I do think it’s important to eat good quality meats when possible. I did a lot of research at one point and wrote a whole series on real food and what to buy. You can find it here, if you’re interested: https://jolynneshane.com/category/food/real-food

  3. This is a great soup and a cinch to make.  You don’t have to be a slave to the exact veggies either.  If celeriac root is too expensive or not available, it’s just as tasty to sub a rutabaga or sweet potato.   It’s on rotation tonight so dinner will be ready after my daughter’s volleyball match.
