{Gluten Free} Meal Plan 5.23.11

This week’s meal planning was easy because I went to the farmers’ market on Saturday and picked up a few meat items and some fresh veggies. I am still waiting on my beef order to be ready, and I’m about due to drive out to the farm where I like to stock up on chicken, so I’m just piecing things together until then with whatever I can find that is affordable at the farms and farmers’ markets I frequent.

I’m going to go ahead and label this a gluten free menu plan, because that’s what it is and what it likely will be for a long time to come. The gluten free lifestyle definitely agrees with me, although I’m learning that to keep my tummy happy, I have to pay attention to more than the gluten in my diet. Carbs and sugars in general make me feel bloated and nasty, so I’m working really hard on keeping those items to a minimum, but it’s hard. I do so love my carbs!!

Anyway, I digress.

Gluten Free Meal Plan

MONDAY: Chicken and Rice Casserole (I’m going to try to up the flavor quotient a bit, if it works out, I’ll post my version of the recipe.)

TUESDAY: Ina Burgers, BBQ potato chips (have you tried these? we can’t get enough of them), sauteed swiss chard

WEDNESDAY: Pan-fried pork chops (no recipe – just fry them up on the stovetop in an iron skillet over medium-high heat with lard and salt-and-pepper), GF mac-and-cheese (recipe to come), collard greens

THURSDAY: leftovers

FRIDAY: Shrimp and Grits (This time I’m not messing around! I already bought the shrimp, and I’m DEFINITELY making this this week, after putting it on my menu plan AT LEAST three times already.)

SATURDAY: Tequila Lime Chicken, quinoa cooked in HM chicken stock, oven roasted asparagus, with guacamole and organic (non-GMO) tortilla chips as a pre-dinner snack

    You can get pastured chicken breast from Lindenhoff farm they are a vendor at the West Chester Grower’s Market. When I can’t get/or afford pastured chicken I just get the best quality organic free range hormone/antibiotic free chicken I can get at Trader Joes.

    My two daughters and I are celiacs, so we have to eat gluten free. Like you I find less carbs (from grains) makes me feel my best, not just eliminating gluten.
