{Gluten Free} Weekly Meal Plan 11.26.12

This week is crazy. I have 3 evening events, so meal planning is gonna suffer. This is my goal. I hope it works out!

MONDAY: I’ll be at our PSMM Holiday Party so my family will be eating pasta (I recommend Tinkyada for a good quality gluten free pasta) with Rose Romano’s Italian Pepper Marinara and grated Parm. So yum and so easy.

TUESDAY: We have a ton of greens from our CSA in the fridge so I will be combining several to use in this recipe: Bok Choy with Bacon & Onions. I’ll serve them with a Beef Brisket and some mashed potatoes.

WEDNESDAY: Salmon Cakes with some veggies on the side – I still have a ton of stuff from our last CSA pickup which was over a week ago.

THURSDAY: I hope to find time to make a double batch of Hamburger Soup. I have to go out to an event, but I’ll leave some for the family to eat while I’m out, and hopefully freeze some to give to a friend who’s going thru a rough time.

FRIDAY: something easy . . . probably this Crustless Italian Sausage Quiche with a side salad.

SATURDAY: My husband and I will be at his holiday party, we’ll probably order pizza for the kids.

    1. This week I’ll be at an event, so not eating at home. But yes, when we order pizza takeout, I either eat leftover dinner or snack on something GF or pop an Udi’s frozen GF pizza in the oven for me. 🙂

  1. Ok, cuz I saw that Dominos has a GF pizza and since my son only has an intolerance I wondered how “good” it was for a GF pizza. I wondered if you had tried it with any success- if you do let me know . 🙂 We tried Against the Grain pizza and he liked it, I just cut it in half since he will only eat 1/2 of the whole pizza at one meal anyway.

    1. Yes, I’ve tried it. It is just okay. And it depends on how sensitive you are. I wouldn’t trust it if he is celiac. But for my mild sensitivity, I can tolerate it fine. I just don’t think it tastes that good and it is $$$$. I also love Against the Grain. I make it with Rose Romano’s marinara sauce and pepperoni and provolone and mozzarella. 🙂

  2. I quickly went over and change my menu plan when I saw the sausage quiche. 😉 Thanks for reading my mind! I was getting a bit tired of the pizza or mac and cheese routine for Friday nights.

  3. Jo Lynne, I have been working on this recipe for quite some time. I actually got it perfected in time for Thanksgiving…getting the post out in time was another story LOL. This recipe does take some time to put together, but the flavor is well worth the effort! Enjoying a gluten and dairy free Pumpkin Cheesecake using our very own pureed pumpkin is so satisfying. Hope anyone that tries it out enjoys it as much as we do 🙂
