{Gluten Free} Meal Plan 9.26.11

Good Monday Morning! I hope you had a glorious weekend.

The weather held out around here. Even though it feels like a tropical jungle, at least it didn’t rain much. And while we decided to forego our trip to the western part of the state due to the weather forecast and my dreadful headcold, I did rally enough to go out to a nice dinner on Saturday night, where I tried, among other things, cow tongue. Oh yes I did. But that’s another post. (I even have pictures!)

Oh and by the way. Did you see my new Recipe Index??? It’s it BEAUTIMOUS!?? I absolutely love it. So when you’re looking for a recipe on my site, if my fancy Search Bar isn’t working for you, you can take a peek at my recipe index and hopefully find it there.

But for now, it is Monday. And you know what that means . . .

Menu Plan Monday

MONDAY: Company Pot Roast (except there’s no company. ha!)

TUESDAY: Chicken Chili with spinach salad

WEDNESDAY: Salmon Cakes, sauteed swiss chard, and brown rice

THURSDAY: Fall Quinoa Pilaf and a salad

FRIDAY: Hamburger Soup with corn muffins (for the non-GF among us)

And that’s a wrap. Weekends are a free for all around here. We usually end up eating leftovers or ordering pizza or, if I’m lucky, going out to dinner (cow tongue optional. HA!)

    My husband has just been diagnosed with a wheat allergy. Are there any companies you have found that have good baked goods (i.e. bread, cookies, etc.)? He really misses bread the most!

      Hi Donna! Yes, that is hard. I loved cookies and breads so much too. Bread is a hard one. It simply does not taste the same as wheat bread. But. There are some good breads. My favorite to buy at the store is Udi’s. I keep it in the house all the time. My kids (who are not gluten free) eat it toasted or for French Toast. Personally, I always toast it. It’s better that way. They also have hot dog and hamburger buns. Again, I toast them.

      I also love Udi’s cookies, but they are sometimes hard to find in stores. they are soon to be launching them online though!!!

      I also have good luck with local bakeries who are trying to have some gluten free offerings. Google and ask around and find some in your neck of the woods. Our farmers’ market has a cupcake vendor who makes gluten free cupcakes, and there are some coffee shops that offer gluten free cookies.

      It’s a lot of trial and error. Pamela’s (storebought) cookies are okay.

    I can’t help but mention that the Bob’s Red Mill GF Cornbread mix is SO YUMMY. My daughter has Celiac but I make a batch of the GF muffins for all of us with dinner cause they taste so good and so “normal” if ya know what I mean :).
