September is National Breakfast Month so I am slipping this post in just under the wire!

This is the first of five recipes I will be creating in partnership with Krusteaz using their new gluten-free baking mixes, and you guys! These waffles are AMAZING. They asked me to create a recipe with the Krusteaz Gluten Free Buttermilk Pancake Mix that could be breakfast-for-dinner. I don’t know about you, but personally I love serving breakfast for dinner. That is often our fallback plan when I don’t get to the grocery store to make the recipe on my weekly meal plan.

I wanted to come up with something fun and a bit different and something hearty enough that it would work for a dinner meal. I did some perusing on Pinterest and decided to do something with peanut butter and bananas. I used to rely on gluten-free toast with peanut butter and sliced bananas on top for a hearty pre-run breakfast on the days that I raced or ran more than 5 miles, so it seemed like a good breakfast-for-dinner combination.

My family prefers waffles to pancakes so I decided to make Peanut Butter and Banana Waffles. After experimenting with a few variations, I came up with these Banana Waffles with Peanut Butter Syrup

You can omit the syrup and just spread them with peanut butter if you prefer not to have so much sugar with dinner. My kids, however, lapped them up with this peanut butter syrup on top.

Using a gluten-free baking mix makes sense when making waffles and pancakes because gluten-free baking requires a combination of flours and supplemental ingredients like xanthan gum to mimic the familiar texture of gluten. I have been impressed with how delicious the Krusteaz gluten-free baking mixes are. I truly do not miss the gluten.
