Best Belgian Waffles

My parents are in town this weekend, and my kids know that means homemade waffles for breakfast!  This recipe is our old standby; we’ve been using it for as long as I can remember.  The secret is the stiff egg whites.

Fluffy, crisp on the outside, soft on the inside, these are the ultimate Belgian waffles.
Ingredients
  • 2 egg whites, stiffly beaten
  • 2 egg yolks
  • 1-1/2 cups milk
  • 2 cups flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp vanilla
  • 1/3 cup oil
Instructions
  1. Beat egg whites until stiff.  Set aside.
  2. In a separate bowl, mix remaining ingredients well. Gently fold whites into batter with a large metal spoon until just blended. When blended, the batter will still be lumpy.
  3. Spoon batter into preheated Belgian waffle iron.  Cook until golden brown. Serve hot with butter and REAL maple syrup.

  1. We had to switch to pancakes to keep up with the kiddos. They are heavy eaters, but on pancake day, my husband and I have a glimpse of the money pit that will be their teens.
